Sweet Potato Waffles – Cook Local

Yummy Sweet Potato Waffles!

Sweet Potato Waffles – Breakfast for dinner?  Why not!

Have you cleaned up all of your Thanksgiving leftovers yet?  Sometimes the hardest thing to do is to keep eating the same thing day after day.  I love to repurpose leftovers.  Since we just enjoyed a great Thanksgiving dinner, I’m thinking you may have leftover sweet potatoes in the refrigerator also!

If so, I have the meal for you.  Take those sweet potatoes and repurpose them into Sweet Potato Waffles. These are so good and when topped with sliced strawberries and some maple syrup, they become a totally different and incredibly delicious meal!

If you made the candied sweet potato recipe I shared a couple of weeks back and have some leftovers, terrific.  If you didn’t pick up any potatoes at the farmers market – a can of sweet potatoes purchased at the grocery store will work just fine.

Here’s some easy directions to make Homemade Sweet Potato Waffles –

You’ll mash up the sweet potatoes – if you already have them mashed, then that’s perfect.

Combine the wet ingredients – egg, egg-nog, milk and vanilla – mix well.

Next the dry ingredients – flour, baking powder and salt. Mix the dry ingredients thoroughly and incorporate them into the wet ingredients.  Combine well, but do not over mix.  A few lumps are just fine.

Allow the ingredients to sit at room temperature for about 30 minutes.  Then heat up the waffle maker, it’s time to make the waffles!

Top the Sweet Potato Waffles with some of our local sliced strawberries, maple syrup, powdered sugar and whipped cream.  How easy is that?

Serves: 6-7 waffles
Ingredients
  • 1 cup cooked, mashed sweet potatoes*
  • 1 egg
  • 1 1/2 cups eggnog
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt[br]
  • [b]Suggested toppings -[/b][br]
  • 1 pint sliced strawberries
  • maple syrup
  • powdered sugar
Instructions
  1. Combine all of the wet ingredients and mix thoroughly.
  2. Combine the dry ingredients and sift into the wet ingredients. Mix to incorporate, but do not over mix.
  3. Set aside to rest for about 30 minutes.
  4. Cook waffles according to the directions on your waffle maker.
  5. Top with sliced strawberries, pure maple syrup and powdered sugar.
