Some of the best Fresno food stories don’t start with investors, big kitchens, or master plans.

They start in a front yard… with a family trying to create something special.

That’s exactly how Get Baked 559 was born.

From the Front Yard to a Fresno Phenomenon

About six years ago, the Esparza family—Samuel and Evone—started selling loaded baked potatoes right out of their front yard. They quickly realized they had a following. People weren’t just stopping by; they were coming back for more.

So, they took a chance.

They bought a food truck, hit the streets of Fresno, and turned their passion into a full-time family business. With Samuel and Evone running the operation and Joseph Leal working his culinary magic as the cook, they built a menu that asks a simple question:

What if the potato wasn’t just a side dish? What if it was the star of the show?

Let’s be honest… in Fresno, we have incredible taco trucks, amazing BBQ, and fantastic burger spots on almost every corner. But a truck dedicated entirely to massive, creatively loaded baked potatoes? That was something new.

And according to their growing fan base, it was exactly what Fresno needed.

Betting on the Spud

They noticed something.

When you go to a potluck or a steakhouse, the baked potato is always there, but it’s usually playing second fiddle. It’s an afterthought.

At Get Baked 559, they flip the script.

Before any toppings even touch the potato, these massive spuds are mashed, buttered, and salted to perfection. Then, the real fun begins.

Yes, they respect the classics. You can get their Original Loaded Potato packed with shredded cheddar cheese, bacon, sour cream, and green onions. But what makes Get Baked 559 stand out is their creativity and willingness to push boundaries.

The Surf & Turf

This isn’t your average potato. It’s loaded with sirloin steak, shrimp, bell peppers, onions, and cheese. It’s a full steakhouse dinner served in a convenient, edible bowl.

The Monster

Exactly what it sounds like. A massive potato piled high with steak, shrimp, hot links, pastrami, and cheese.

The DUI

A fan favorite, especially when they park outside local breweries. It comes loaded with steak and pastrami. As they tell their customers, “It’s the only DUI you want.”

Not a potato fan? No problem. They offer all of their incredible toppings over a bed of crispy fries, too.

It’s comfort food with a twist. Bold combinations. Big flavor. And a willingness to try things most people wouldn’t think of putting on a potato. That mindset keeps their customers coming back to see what’s next.

Get Baked 559 isn’t trying to become a massive corporate chain.

They’re building something more meaningful.

It’s a family-owned operation. They love what they do, and they love meeting the people of Fresno and Clovis every single day. Even during the toughest times of the pandemic, lines of hungry customers could be seen waiting outside their truck.

As Evone Esparza noted, “They understand, and they wait in line for our food. That means a lot because that means we are doing something right.”

Their goal isn’t just to serve food.

It’s to create moments. Conversations. Smiles. Repeat customers who feel like friends.

I grew up in Fresno. Relaxed in its calm breezes, listened with my dad to the crack of the bat at little league baseball games when I was a kid and now take my son to do the same at minor league games. I broadened my mind at its schools (I went to high school right here at San Joaquin Memorial, and to college at Fresno State!) I love that if I drive for two hours in one direction, I can be in the mountains. For two hours in another, luxuriating on a California beach. I can enjoy the cosmopolitan atmosphere of San Francisco or Los Angeles, but still be able to come home to relaxation, calm, and quiet.

I love where I live, and I also love what I do. I'm lucky to be able to work in a profession in which I get to build relationships; one that has me meeting new people each and every day and helping them to build new lives in my beloved city. I'm lucky enough to work in a profession in which I can marry cutting-edge technologies and marketing techniques to good, old-fashioned, nose-to-the-grindstone work. I am lucky enough to work in a profession that allows me to work as an advocate for my clients; to use every tool at my disposal to get a job done well for them, and with as little stress and expense as possible.

I love my city. I love my job. One inspires my excellence for the other.
