Every so often, a new food spot pops up that feels like an instant classic—like it’s always been there, just waiting to be discovered. That’s exactly the vibe at Guisados Greicy, a humble yet vibrant and bustling food-truck-centered-pop-up serving homey, comforting Mexican cuisine on Fresno’s west side. Located near West Shaw and Highway 99, this isn’t your average taco truck—it’s a full-service experience with restaurant-quality hospitality, beautiful presentation, and an unmistakable sense of heart behind every dish.

A Labor of Love

So, who is Greicy? According to the business, she’s “a wife, mother, grandmother, and the proud owner” behind this local treasure. Greicy’s love for cooking started early, but it was during her recovery from knee surgery last year that she truly leaned into making guisados (a term that encompasses home-cooked dishes that define comfort food across Latin America) and began to dream of having her own restaurant.

What started as a dream turned into reality when Greicy took a leap of faith, purchased a food truck, and began serving her now-famous plates just over six months ago. Since then, word has spread fast, and Guisados Greicy has become a must-visit for anyone craving authentic flavors, fresh ingredients, and service that makes you feel like family.

It was a chilly, rainy night when my husband and I went – but that didn’t slow the crowds at all from this great spot! Yum!

What to Order

If you haven’t been yet, you’ll want to go hungry because the menu is packed with mouthwatering options. Here are some standout favorites:

🥩 Quesabirria Tacos – These rich, cheesy, crispy tacos dipped in savory consommé are already the stuff of legend. The beef is slow-cooked to perfection, and the depth of flavor is next level.

💖 Heart-Shaped Gorditas – These adorable, handcrafted masa pockets are stuffed with flavorful fillings and fried to golden perfection—both Instagram-worthy and delicious.

🍓 Pink Horchata – A refreshing twist on a classic, this creamy strawberry horchata is as delicious as it is pretty.

🌮 More Than Just Tacos – The menu offers a variety of traditional Mexican dishes and full meals, featuring slow-simmered and grilled meats and delicious beans, rice and handmade tortillas.

The Experience

One of the things that makes Guisados Greicy stand out—aside from the food—is the thoughtful presentation and warm hospitality. Unlike your typical taco truck, you order at the window, grab a seat at one of their six outdoor tables, and wait for your food to be served to you on gorgeous, hand-painted Mexican clay plates. The attention to detail—from the fresh salsas to the high-quality ingredients—makes it clear this is more than just a food truck; it’s a passion project.

And if you want to beat the crowds, come early! A Yelp reviewer noted that they were among the last customers for the early lunch hour, as Guisados Greicy sometimes closes for periods to handle catering bookings, before reopening for the night shift—perfect for night owls and late-night foodies.
